Happy September!

     Happy happy happy September! I don't normally post on the weekends, but it's the first day of September. I was compelled to share our Happy September cake.


     This cake is called a hummingbird cake. You can use a search engine and type in "hummingbird cake" and procure numerous results, or you can use the recipe below that we received from a friend.

Hummingbird Cake:

3 cups self-rising flour*
2 cups sugar
1 teaspoon cinnamon
1 (8-ounce) can crushed pineapple, undrained
2 cups chopped nuts, divided (we omitted)
3 eggs, beaten
1 1/2 cups oil
1 1/2 teaspoons vanilla
2 cups chopped bananas

1 stick margarine
1 box powdered sugar
1 (8-ounce) package Philadelphia Cream Cheese

Combine dry ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup chopped nuts, and bananas. Spoon batter into two well-greased and floured cake pans. Bake at 350 degrees for 25-30 minutes or until done. Cool in pans for 10 minutes. Remove from pans and cool completely. Spread frosting between layers and on top and sides of cake. Sprinkle with nuts. Enjoy!

*It may rise better if you use all-purpose flour and add 1 teaspoon salt and 1 teaspoon baking soda.
